While colours vary from mushroom to mushroom, there are certain things you must look out for, no matter what the variety! Avoid significant, unusual discolouration, extensive dark patches or bits that look damaged or decayed. 

4. Fresh Aroma

5. Closed Gills (Where Applicable)

Closed gills means the delicate tissue connecting the cap and stem is still intact - this means the mushroom is young and has a more delicate flavour.
