Milky Mushrooms & Peas Sabzi

Serves - 1-2 people

Cooking time - 25 mins
Ingredients:
250g Milky Mushroom
¾ cup green peas
½ cup chopped onion
1/3 cup chopped tomatoes
1 tbsp chopped green chillies
½ tbsp ginger paste
1 tsp cumin seeds
1 tsp turmeric
1 tsp chilli powder
A handful of chopped coriander leaves
2 tbsp ghee
Salt to taste
Process:
- Clean any remaining dirt off the mushrooms with a damp towel and dice them.
- Heat a tbsp of ghee in a pot.
- Add mushrooms and fry on high heat until slightly golden. Once done keep them aside.
- Heat a tbsp of ghee in that same pot. Temper cumin seeds.
- Add onions and fry until golden.
- Add green chillies and tomatoes. Fry with a pinch of salt until tomatoes soften.
- Add ginger paste and mix well
- Add turmeric, chilli powder. Fry for 45secs then add ¼ cup of water. Add salt, mix and cook the masala for couple of mins.
- Put the fried mushroom and the green peas in the pot. Mix and add ½ cup water. Mix again and simmer until 80% of the water dries out.
- Add a handful of chopped coriander and give it a final mix.
- Serve with hot Roti or rice.
