Shiitake Mushroom and Tofu Larb

Serves - 1-2 people

Prep time - 15 mins

Cooking time - 25 mins


1 tbsp coconut oil

1 red onion chopped

2 garlic cloves

1/2 green chilli

Salt and pepper to taste

4 shiitake mushroom 

1 tsp brown sugar

60g tofu

1 tsp chilli oil

1 tsp soy sauce

5-6 basil leaves

3-4 cashews (to top)


  1. In a pan add coconut oil and sauté in the chopped onion, garlic, and green chilli. 
  2. Season with salt and pepper and sauté it for 1-2 minutes. 
  3. Add in the sliced shiitake mushroom along with brown sugar. Cook the mushrooms for 3-4 minutes. 
  4. Add in crumbled tofu, chilli oil and soy sauce. And cook it for another 1-2 minutes. 
  5. Finally, add some basil and cashews to garnish and serve!
