Fresh Maitake mushrooms, also known as Hen of the Woods, are now available in small batches from Shroomery's farm in Nuh, Haryana. Known in Japan as the "dancing mushroom," Maitake (Grifola frondosa) has been prized in Asian kitchens and traditional medicine for centuries. We're one of the few farms in India cultivating this remarkable variety, and we deliver fresh across Delhi NCR.

Maitake grows in dramatic, ruffled fronds that cluster like a hen's feathers, which is why it's also called Hen of the Woods. Up close, it's one of the most beautiful mushrooms we've cultivated. In the kitchen, it's one of the most versatile.

Its flavour is earthy, nutty, and subtly peppery with a firm, satisfying chew. It holds up to high heat beautifully, roast it until the edges crisp, sauté it in butter with garlic and thyme, fold it into risotto, or batter it into tempura. It also works exceptionally well as a meat substitute, and makes a remarkable mushroom bacon for grain bowls and salads.

Beyond the kitchen, Maitake is one of the most studied functional mushrooms available. Rich in beta-glucans, it supports immune function, helps regulate blood sugar and cholesterol, and is considered an adaptogen, meaning it helps the body manage both physical and mental stress.
