Black Fungus Ginger Vinegar

Serves - 1-2 people

Cooking time - 40 mins
Ingredients:
200g black fungus from @shroomery.in
¼ cup julienned carrot
½ tbsp grated ginger
Salt and pepper
2 tbsp crushed peanuts
2 tbsp vegetable oil
Sauce mix:
1 ½ tbsp soy sauce
1 tbsp apple cider vinegar
2 tbsp light brown sugar
1 tsp cornstarch
2 tbsp water
Process:
-Remove the hard core of the black fungus.
- Heat oil in a wide pan. Add the mushrooms and fry on high heat for 4 mins.
- Add the carrots, salt, pepper, and ginger. Sauté them for 2 mins.
- Mix all the said ingredients for the sauce in a small bowl.
- Pour the sauce mix over the sautéed mushrooms and toss for 30-45secs.
- Lastly, add crushed peanuts and mix.
- Serve it over some cooked noodles. Sprinkle some chopped coriander on top and enjoy.
