Butter Poached Portobello

Serves: 1-2

Prep time: 4 hrs

Cooking Time: 15 mins

Ingredients:

  • 1 pc Portobello mushroom
  • 1 dried red chilli 
  • 1 garlic clove
  • Handful of coconut slices
  • 1 tbsp apple cider vinegar 
  • 1 tbsp Olive oil
  • 1 tbsp butter
  • Salt to taste
  • Pepper to taste

 

Method:

Clean the mushroom thoroughly and marinate it with the other ingredients for 4-5 hours 

Add butter to a pan and drop the marinated portobello in it to cook along with all the ingredients

Cook it on the pan for 5-6 minutes or till it’s cooked to your liking

Your butter-poached portobello is ready! You can now serve it as is or eat it in a pita sandwich, burger, add it to your stir fry rice or pasta, whatever way you prefer.
