Cremini Mushroom & Basil Omelette

Serves: 1-2

Prep time: 5 mins

Cooking Time: 20 mins

 

Ingredients:

  • 250gm cremini mushrooms
  • 3 cloves garlic
  • 5-6 basil leaves
  • 3 eggs
  • 1 tsp salt
  • 3 tbsp olive oil or ghee

Instructions:

Step 1: Put half the oil or ghee in the pan. Add the garlic and saute until fragrant.

Step 2: Slice the mushrooms and add them to the pan. Saute until cooked for 4-5 minutes and remove the liquid. Take the sauteed mushrooms out of the pan, and add chopped basil. 

Step 3: Add the rest of the oil or ghee to your pan. Beat your eggs with salt and pour the egg batter into the pan. Once the omelette is cooked from both sides, add the mushrooms and fold them into an omelette.

Step 4: Garnish with some basil. Enjoy your mushroom omelette with a glass of fresh orange juice!
