Crispy Fried Oysters

Serves - 1-2 people

Cooking time - 25 mins
Ingredients:
200g white oyster mushrooms from @shroomery.in
1 cup AP flour (Maida)
½ cup Tapioca starch (or, corn starch)
1 egg
1 tbsp fresh parsley, finely chopped (or dried parsley)
1 tsp ground black pepper
1 tsp red chilli powder
1 tsp grated garlic
1 tsp mustard paste*
Salt to taste
Vegetable oil for frying
Process:
Toss the white oysters with ½ tsp of salt and rest for 15mins.
Squeeze all the moisture out from the mushrooms.
Make a wet batter whisking ½ cup AP flour, ¼ cup tapioca starch, garlic, mustard, ½ tsp black pepper, ½ tsp chilli, egg, parsley, salt, and water.
Make a dry mix combining the rest of the dry ingredients i.e. flour, starch, chilli, black pepper and salt. Then add 1 tbsp of water and mix. Make a coarse breadcrumb-like mix.
Dip the mushroom in the wet batter first. Then coat with the dry mix and put into the hot oil immediately.
Fry the Oysters on medium heat for 5mins. Take it out. Fry them again on high heat until nice and golden.
Sprinkle a little parsley and lemon juice on top.
Serve hot with ketchup on the side.
*Make a smooth paste of equal amounts of black and yellow mustard then use a tsp of that paste for this recipe.
