Brown Butter Morel

Ingredients:
10-12 dry Morels aka Gucchi mushrooms
80g unsalted butter
½ tsp salt
½ tsp ground black pepper
Parmesan cheese (optional)
Process:
- Wash the Morels with water and soak them in lukewarm water for 20mins.
- Melt the butter in a pan on low heat.
- Once the milk solids start to separate and the butter turns dark amber in colour, add the mushrooms.
- Fry the Morels on medium heat for 5mins.
- Season with salt and pepper.
- Grate some parmesan cheese on top. The cheese will crisp up and will make tiny chips.
- Serve the Morels on some creamy mashed potatoes.
