Gucchi Yakhni on Ghee Rice

Serves: 1-2 

Prep time: 5 mins

Cooking time: 25 mins 

 

Ingredients 

  • 5-6 pcs Dried Gucchi (washed under running water)
  • 5-6 baby potatoes 
  • 3 tsp ghee
  • 1 onion, sliced
  • 150gm yoghurt, unstrained
  • Pinch of hing
  • 1.5 tsp fennel powder 
  • 1 tsp ginger powder
  • Pinch of black cardamom
  • 1 tsp cumin seeds
  • 1 green cardamom
  • 1 bay leaf
  • 1 cinnamon 
  • 1 green chilli, slit

Method:

Heat ghee in a wok. Add the whole spices and let it sauté till aromatic

Add the onion, dried gucchi and potatoes 

Add the powdered spices and let it cook for 2 minutes

Add the yoghurt and cook till potatoes are cooked through

Adjust seasoning and serve with steaming rice and ghee!
