Mushroom Gravy with Carrot Mash

Mushroom Gravy
Ingredients:
- 250 gms Shroomery Cremini Mushrooms
- 2 cups veggie/chicken/mushroom broth
- 1 tbsp miso paste or soya sauce
- 3 tbsp ghee or olive oil
- 1 small bunch of chives, green onions or one onion
- 2 cloves garlic, finely chopped
- 3 tbsp cornstarch or tapioca flour (maida works too)
- salt and pepper to taste
- A warm slice of bread of your choice
Instructions:
Step 1: Saute your garlic in oil/ghee.
Step 2: Add chives and mushrooms, cook until ready.
Step 3: Add the cornstarch/tapioca flour and miso/soya sauce to the broth, and pour over the mushrooms. Cook for 3-5 minutes until it thickens to a nice gravy.
Carrot Mash
Ingredients:
- 400g carrots, peeled and chopped
- 3-4 cloves garlic
- 3 tbsp ghee or olive oil
Instructions:
Step 1: Steam your carrots until nice and soft. Sauté your garlic until fragrant.
Step 2: Place all ingredients in a blender or food processor and blend until nice and smooth.
Take your favourite bowl from the cupboard. Pour out all the warm carrot mash along the sides of the bowl. Pour in the mushroom gravy in the centre of the bowl. Dig in with your favourite slice of warm toasted bread. Enjoy with a glass of bubbly ginger kombucha.
