Oyster Mushroom and Sabudana Khichadi

Serves- 2 

Prep time- 6 hrs

Cooking time- 20 min

Ingredients:
  • 3 tsp Coconut oil
  • 1 pinch Mustard seeds
  • 1 pinch Cumin seeds
  • ½ sliced Onion
  • 1 green chilli 
  • 5-6 Curry leaves
  • Course Peanut powder
  • 150g Shroomery Oyster Mushrooms
  • 100gm sabudana (soaked overnight)
  • 200gm vegetable stock
  • Salt 
  • Pepper

Method:

In a pan heat some coconut oil 

Temper the spiced add the onion, peanuts and the mushroom 

Season and cook on high heat for a minute 

Then add the sabudana and the stock 

Cook on high heat till its only slightly liquid.

Close the heat and serve instantly with a drizzle of good quality coconut oil.
