Oyster Mushroom and Sabudana Khichadi

Serves- 2
Prep time- 6 hrs
Cooking time- 20 min
Ingredients:- 3 tsp Coconut oil
- 1 pinch Mustard seeds
- 1 pinch Cumin seeds
- ½ sliced Onion
- 1 green chilli
- 5-6 Curry leaves
- Course Peanut powder
- 150g Shroomery Oyster Mushrooms
- 100gm sabudana (soaked overnight)
- 200gm vegetable stock
- Salt
- Pepper
Method:
In a pan heat some coconut oil
Temper the spiced add the onion, peanuts and the mushroom
Season and cook on high heat for a minute
Then add the sabudana and the stock
Cook on high heat till its only slightly liquid.
Close the heat and serve instantly with a drizzle of good quality coconut oil.
