Oyster Mushroom Stir Fry

Serves: 1-2

Cooking time: 20 mins
Ingredients:
- 250g oyster mushrooms
- 1 tsp soy sauce
- 1 thumb ginger, shredded
- 6 green onions
- 2 tbsp olive oil or ghee
- 1/4 tsp ground Szechuan peppercorn (optional)
- Coriander stems for garnish
Instructions:
Step 1: Wash and cut the mushrooms
Step 2: Heat the oil/ghee in a pan. Add green onions and ginger
Step 3: Once the onions and ginger are sizzling, add mushrooms and soy sauce
Step 4: Cook until mushrooms reduce in size and are soft and brown
Step 5: Garnish with pepper and coriander
Serve over a bowl of rice or noodles.
