Pink Oyster Toast

Serves - 1-2 people

Prep time - 10 mins

Cooking time - 15 mins

 

Ingredients:

100g torn Pink Oyster Mushroom

3 tbsp soft cottage cheese (or, ricotta)

1 clove garlic

1 piece of toasted bread (of your choice)

3-4 tbsp honey

2 tsp red chilli flakes

2 tsp olive oil

Salt

Process:

  • Heat honey with the chilli flakes on low heat. Once the honey starts to bubble, remove the pot from the heat and keep it aside.



  • Sauté the mushrooms in a tsp of olive oil until golden brown, then season them with salt. Don’t stir the mushroom very often while cooking, it’ll make them steam instead of getting a crisp caramelisation. 



  • Now rub the garlic clove on your toast very well. Put the cheese, spread evenly, and season with salt.
  • Put the mushrooms on top and make it pretty.
  • Drizzle a tsp (or, more) of the hot honey on top and enjoy.
