Shiitake Pickle

Serves - 4-5 people

Cooking time - 15 mins
Ingredients:
250g Shiitake mushrooms
300ml water
150ml apple cider vinegar (or, white vinegar)
100ml soy sauce
4 tbsp light brown sugar (or, regular sugar)
Process:
- Clean any remaining dirt off the Shiitake with a damp towel and cut them in halves.
- Take water, vinegar, soy sauce, and sugar in a saucepan. Then give it a good mix and add the mushrooms.
- Turn the heat on and let it come to a boil over medium heat.
- Once it starts boiling, switch off the heat and let the pickle cool down completely.
- Put the room temp. pickle into a glass jar and store it in the fridge until needed.
- Serve the sliced pickled shiitakes as toppings in a rice bowl or ramen. You can use it in stir-fried veggies, noodles, and sandwiches too. You can also use the pickling liquid to make ramen eggs or marinades.
